Why This Recipe Works

➡️ Rolled oats provide a source of fibre and complex carbohydrates, helping to provide slow-releasing energy throughout the day. Oats also have B vitamins, contributing to better energy release.

➡️ Walnuts are naturally rich in omega-3 fats (ALA), whilst almonds and pistachios provide vitamin E and magnesium. Together, these nutrients help support heart health, normal muscle function, and the protection of cells from oxidative stress.

➡️ Pumpkin, sunflower, chia, and flaxseeds contribute fibre, healthy fats, and minerals (like zinc and magnesium). Zinc contributes to the normal function of the immune system, whilst magnesium helps reduce tiredness and fatigue.

➡️ Banana chips provide a touch of natural sweetness alongside potassium. Potassium contributes to the maintenance of normal blood pressure and supports normal muscle function.

➡️ Cinnamon adds warmth and flavour without the need for excessive sugar. Plus naturally occurring plant compounds which add to the overall antioxidant content, (always a win).

➡️ Homemade granola allows you to control the amount of added sugar and choose the ingredients that suit your preferences. It is often better for your pockets and is easily adaptable

➡️ Meal-prep friendly and ready in under 30 minutes, Stored in an airtight container for up to two weeks, making busy mornings that little bit easier.

  • 50 g walnuts roughly chopped
  • 50 g roasted pistachios roughly chopped
  • 30 g pumpkin seeds
  • 30 g sunflower seeds
  • 20 g chia seeds
  • 20 g flaxseeds
  • 50 g dried cranberries
  • 50 g unsweetened banana chips roughly chopped
  • 1 tsp ground cinnamon
  • Pinch of sea salt
  • 60 ml extra-virgin olive oil or melted coconut oil
  • 80 ml maple syrup or honey
  • 1 tsp vanilla extract

Equipment

  • Large mixing bowl
  • Measuring cups/spoons or kitchen scales
  • Wooden spoon or spatula
  • Large baking tray
  • Baking parchment/paper
  • Oven
  • Airtight container or glass jar (for storage)

Method

  1. Preheat your oven to 160°C (fan 140°C) and line a large baking tray with baking parchment.
  2. In a large mixing bowl, combine the rolled oats, almonds, walnuts, pistachios, pumpkin seeds, sunflower seeds, chia seeds, flaxseeds, cinnamon, and a pinch of sea salt.
  3. In a separate bowl or jug, whisk together the extra-virgin olive oil, maple syrup (or honey), and vanilla extract until well combined.
  4. Pour the wet ingredients over the oat mixture and stir thoroughly until everything is evenly coated.
  5. Spread the mixture evenly across the prepared baking tray, ensuring it is in a single layer. Press down lightly with the back of a spoon if you prefer larger granola clusters.
  6. Bake for 25–30 minutes, stirring once halfway through cooking, until the granola is lightly golden and fragrant.
  7. Remove from the oven and allow the granola to cool completely on the tray. It will continue to crisp up as it cools.
  8. Once cooled, stir through the dried cranberries and chopped banana chips.
  9. Transfer to an airtight container or glass jar and store at room temperature for up to two weeks.
