Why This Recipe Works

Brain-Boosting Healthy Homemade Granola (TNK Nutri-Ola)

- Preheat your oven to 160°C (fan 140°C) and line a large baking tray with baking parchment.
- In a large mixing bowl, combine the rolled oats, almonds, walnuts, pistachios, pumpkin seeds, sunflower seeds, chia seeds, flaxseeds, cinnamon, and a pinch of sea salt.
- In a separate bowl or jug, whisk together the extra-virgin olive oil, maple syrup (or honey), and vanilla extract until well combined.
- Pour the wet ingredients over the oat mixture and stir thoroughly until everything is evenly coated.
- Spread the mixture evenly across the prepared baking tray, ensuring it is in a single layer. Press down lightly with the back of a spoon if you prefer larger granola clusters.
- Bake for 25–30 minutes, stirring once halfway through cooking, until the granola is lightly golden and fragrant.
- Remove from the oven and allow the granola to cool completely on the tray. It will continue to crisp up as it cools.
- Once cooled, stir through the dried cranberries and chopped banana chips.
- Transfer to an airtight container or glass jar and store at room temperature for up to two weeks.
