Brain-Boosting Healthy Homemade Granola (TNK Nutri-Ola)

Crunchy oats, nuts, seeds, and banana chips come together to create this naturally sweetened homemade granola. Packed with fibre, healthy fats, and slow-releasing carbohydrates, TNK Nutri-Ola is perfect for meal prep and makes a delicious breakfast or snack when served with yoghurt, milk, or fresh fruit.

Ingredients
  

  • 300 g rolled oats
  • 50 g almonds roughly chopped
  • 50 g walnuts roughly chopped
  • 50 g roasted pistachios roughly chopped
  • 30 g pumpkin seeds
  • 30 g sunflower seeds
  • 20 g chia seeds
  • 20 g flaxseeds
  • 50 g dried cranberries
  • 50 g unsweetened banana chips roughly chopped
  • 1 tsp ground cinnamon
  • Pinch of sea salt
  • 60 ml extra-virgin olive oil or melted coconut oil
  • 80 ml maple syrup or honey
  • 1 tsp vanilla extract

Equipment

  • Large mixing bowl
  • Measuring cups/spoons or kitchen scales
  • Wooden spoon or spatula
  • Large baking tray
  • Baking parchment/paper
  • Oven
  • Airtight container or glass jar (for storage)

Method
 

  1. Preheat your oven to 160°C (fan 140°C) and line a large baking tray with baking parchment.
  2. In a large mixing bowl, combine the rolled oats, almonds, walnuts, pistachios, pumpkin seeds, sunflower seeds, chia seeds, flaxseeds, cinnamon, and a pinch of sea salt.
  3. In a separate bowl or jug, whisk together the extra-virgin olive oil, maple syrup (or honey), and vanilla extract until well combined.
  4. Pour the wet ingredients over the oat mixture and stir thoroughly until everything is evenly coated.
  5. Spread the mixture evenly across the prepared baking tray, ensuring it is in a single layer. Press down lightly with the back of a spoon if you prefer larger granola clusters.
  6. Bake for 25–30 minutes, stirring once halfway through cooking, until the granola is lightly golden and fragrant.
  7. Remove from the oven and allow the granola to cool completely on the tray. It will continue to crisp up as it cools.
  8. Once cooled, stir through the dried cranberries and chopped banana chips.
  9. Transfer to an airtight container or glass jar and store at room temperature for up to two weeks.

Notes
