Slice the banana into approximately 10–12 rounds and arrange them on a plate or tray.
Spread a small amount of peanut butter onto half of the banana slices, leaving the remaining slices plain.
Melt the dark chocolate in a microwave-safe bowl using short bursts, stirring between each burst until smooth.
Drizzle the melted chocolate over all the banana slices.
Sprinkle over the desiccated coconut.
Place in the fridge for 15–20 minutes, or until the chocolate has set.
Enjoy immediately or store in an airtight container in the fridge until ready to eat.
