Ingredients
  

  • 12 mini peppers mixed colours
  • 200 g full-fat cream cheese
  • 1 tbsp fresh dill finely chopped
  • 1 tbsp fresh parsley finely chopped
  • 1 tsp dried oregano or 1 tbsp fresh oregano, chopped
  • ½ tsp garlic granules
  • ¼ tsp black pepper
  • Pinch of sea salt optional
Optional Garnish:
  • Extra chopped parsley
  • Fresh dill
  • Cracked black pepper

Method
 

  1. Wash and dry the mini peppers. Slice each pepper in half lengthways and remove the seeds and white membrane.
  2. In a mixing bowl, combine the cream cheese, dill, parsley, oregano, garlic granules and black pepper. Stir until smooth and well combined. Taste and add a pinch of sea salt if desired.
  3. Using a spoon or spatula, generously fill each mini pepper half with the cream cheese mixture.
  4. Arrange the stuffed peppers on a serving platter and sprinkle with a little extra parsley, dill and cracked black pepper for garnish.
  5. Serve immediately or refrigerate in an airtight container for up to 2 days.
