Method
- Bring a small saucepan of water to the boil. Carefully add the eggs and cook for around 6 minutes for gooey, runny eggs or 8 minutes for firmer boiled eggs. Once cooked, transfer to cold water and peel.
- Slice and toast the sourdough.
- Mash the avocado in a bowl with the parsley, dill, garlic granules, salt, pepper, and olive oil.
- Spoon onto the toasted sourdough.
- Top with chopped walnuts and the boiled eggs.
- Finish with chilli flakes or a drizzle of honey if desired.
