Strawberry & Banana Frozen Yoghurt Lollies

Creamy, fruity and naturally sweet, these Strawberry & Banana Frozen Yoghurt Lollies combine Greek yoghurt, strawberries, blueberries, banana and dates for a refreshing, gut-friendly snack the whole family can enjoy.

Ingredients
  

  • 200 g strawberries hulled
  • 75 g blueberries
  • 1 ripe banana
  • 2 Medjool dates pitted and roughly chopped
  • 1 tbsp milk
  • 150 g full-fat Greek yoghurt ideally containing live cultures

  • Blender or food processor
  • Ice lolly moulds
  • Wooden lolly sticks (if your moulds don’t include them)
  • Medium mixing bowl
  • Measuring spoons
  • Kitchen scales
  • Sharp knife
  • chopping board
  • Spoon or silicone spatula
  • Freezer

Method
 

  1. Add the strawberries, blueberries, banana, Medjool dates and milk to a blender or food processor.
  2. Blitz a few times until the fruit is roughly broken down but still has some texture. Transfer around one-third of the mixture to a bowl and set aside.
  3. Add the Greek yoghurt to the remaining fruit mixture in the blender and blend until smooth and creamy.
  4. Pour the blended yoghurt mixture into the bowl with the reserved fruit and gently stir together. Avoid overmixing so that some small pieces and swirls of fruit remain throughout the lollies.
  5. Spoon or pour the mixture evenly into 5–6 ice lolly moulds, leaving a small amount of space at the top for the mixture to expand as it freezes.
  6. Insert the lolly sticks and place in the freezer for at least 3 hours, or ideally overnight, until completely frozen.
  7. When ready to serve, briefly run the outside of the moulds under lukewarm water for a few seconds to help release the lollies, then gently remove and enjoy.

Notes

TNK’s Tip
For that naturally marbled look, don’t blend everything completely smooth. Leaving some of the berries roughly blended creates little pockets of fruit and gives each lolly slightly different colour and texture.
