Chicken & Vegetable Stir Fry Noodles

A quick, flavour-packed stir fry made with tender chicken, colourful vegetables and silky rice noodles, all coated in a savoury homemade sauce. Perfect for busy weeknights, meal prepping or stocking the freezer with a nutritious homemade meal.

Ingredients
  

For the Stir Fry
  • 250 g dried flat rice noodles
  • 2 chicken breasts thinly sliced
  • 1 tbsp cornflour
  • 1 tbsp sesame oil
  • 1 red pepper thinly sliced
  • 1 carrot peeled into ribbons or julienned
  • 200 g pak choi chopped
  • 150 g chestnut mushrooms sliced
  • 150 g beansprouts
  • 3 spring onions sliced (plus extra for garnish)
  • 3 cloves garlic crushed
  • 2 tsp fresh ginger grated
For the Stir Fry Sauce
  • 60 ml light soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp runny honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 tbsp water
  • 1 tsp cornflour
To Garnish
  • 1 tbsp sesame seeds
  • ½-1 tsp chilli flakes adjust to taste
  • Extra spring onions finely sliced

Equipment

  • Large non-stick frying pan or wok
  • Medium saucepan (for cooking the rice noodles)
  • chopping board

  • Mixing bowl or jug (for the stir fry sauce)
  • Wooden spoon

  • Measuring jug
  • Sieve (to drain the noodles)
  • Garlic press (optional)
  • Fine grater or microplane (for fresh ginger, optional)

Method
 

  1. Bring a large saucepan of water to the boil and cook the rice noodles according to the packet instructions until just tender. Drain, rinse under cold water to stop the cooking process and set aside.
  2. In a small bowl or jug, whisk together the light soy sauce, dark soy sauce, oyster sauce, honey, rice vinegar, sesame oil, water and cornflour until smooth. Set aside.
  3. Place the sliced chicken into a bowl and toss with 1 tablespoon of cornflour until evenly coated.
  4. Heat 1 tablespoon sesame oil in a large wok or non-stick frying pan over a medium-high heat. Add the chicken and cook for 5-6 minutes, stirring occasionally, until golden and cooked through. Remove from the pan and set aside.
  5. Add the garlic and fresh ginger to the pan and cook for around 30 seconds until fragrant.
  6. Add the red pepper, carrot and mushrooms. Stir fry for 3-4 minutes, allowing the vegetables to soften slightly whilst still retaining some crunch.
  7. Stir in the pak choi, beansprouts and most of the spring onions, cooking for a further 2 minutes until the pak choi has just wilted.
  8. Return the cooked chicken to the pan, followed by the cooked rice noodles.
  9. Pour over the prepared stir fry sauce and gently toss everything together for 2-3 minutes, ensuring the noodles, chicken and vegetables are evenly coated and the sauce has thickened slightly.
  10. Divide between 4 bowls and garnish with the remaining spring onions, sesame seeds and a sprinkle of chilli flakes before serving.

Notes

Swap the chicken for firm tofu, king prawns or lean beef strips for an easy variation. This recipe is perfect for meal prep and can be stored in the fridge for up to 3 days or frozen for up to 3 months.
