Creamy Coconut Chicken Curry with Lemon Rice

A taste of the tropics to a warming, comforting curry, this Creamy Chicken & Spinach Curry, combines rich coconut flavours with fragrant spices and a fresh citrus finish. The result? A silky, vibrant curry that feels indulgent and comforting, while the zesty lemon rice cuts through the richness and brings the whole dish to life.

There’s something particularly satisfying about the contrast in this recipe. The coconut-based sauce is creamy and aromatic. With layers of warmth from the spices, the tomatoes bring a subtle sweetness and acidity and the spinach adds freshness. Paired with fluffy, fragrant lemon rice, every mouthful has that balance of rich, warming and fresh flavours.

Nutritionally, it’s also a reminder that a balanced meal doesn’t need to mean sacrificing the foods and flavours you love. This dish brings together high-quality protein, carbohydrates, vegetables and fats. Plus an impressive variety of vitamins, minerals and protective plant compounds. Serve with an extra vegetable side or colourful salad and you’ve got a meal that captures exactly what the TNK approach is about. Big flavour, plenty of variety and nutrition that fits naturally into everyday life.

Why This Recipe Works

➡️ This curry is a great example of how a comforting meal can still be nutritionally balanced. Chicken breast provides high-quality protein containing all nine essential amino acids, alongside vitamin B6, vitamin B12, niacin and selenium. Together, these nutrients support normal energy metabolism, immune function and the maintenance and growth of muscle mass.

➡️ Baby spinach adds far more than colour. It provides folate, vitamin K, vitamin C and beta-carotene, alongside the carotenoids lutein and zeaxanthin. These compounds are concentrated in the retina and help protect eye tissues from oxidative stress. Making spinach one of the most nutrient-dense additions to the dish.

➡️ Tomatoes become especially interesting once they’re cooked. They’re rich in lycopene, a carotenoid associated with the red colour of tomatoes and studied for its role in cardiovascular and cellular health. Cooking softens the tomato cell structure, while the fat in the curry can improve the absorption of fat-soluble carotenoids such as lycopene. It’s a reminder that cooking can sometimes make certain nutrients more available to the body.

➡️ The spice blend contributes much more than heat and aroma. Turmeric contains curcuminoids, including curcumin, while cumin and coriander provide a range of polyphenols and aromatic compounds. Using a mixture of herbs and spices increases plant diversity within the meal and adds flavour without relying on excessive salt.

➡️ Ginger and garlic provide another layer of flavour and phytochemicals. Fresh ginger contains gingerols, which can convert into shogaols during heating, while crushed garlic forms organosulfur compounds such as allicin. These compounds are widely studied for their antioxidant and anti-inflammatory properties, although their benefits are best considered as part of an overall healthy dietary pattern.

➡️ Coconut milk gives the sauce its rich, creamy texture and helps carry the flavours of the spices. It also contains a relatively high proportion of saturated fat, so the key is balance rather than excess. Using a moderate amount allows the curry to stay creamy and satisfying while tomatoes, spinach, herbs and spices remain the nutritional focus.

➡️ This recipe also shows how nutrients can complement one another within a meal. Spinach provides non-haem iron, while tomatoes contribute vitamin C, which can help improve the absorption of plant-based iron. Fat from the coconut milk can also support the absorption of fat-soluble carotenoids from the tomatoes and spinach.

➡️ There’s a strong plant-diversity element here too. Tomatoes, spinach, coriander, ginger, garlic, chilli and spices each provide different phytonutrients, including polyphenols, carotenoids and organosulfur compounds. Rather than relying on one “superfood”, the benefit comes from combining a range of plant foods in one dish.

➡️ Paired with lemon basmati rice and an extra vegetable side or salad, this curry fits naturally into the TNK plate approach. You get protein, carbohydrates, vegetables and fat in one satisfying meal, without needing to remove the rice or make the curry artificially “low-fat”. The focus is on balance, variety and building a meal that is both enjoyable and nourishing.

  • 2 tsp fresh lemon juice
  • 2 tbsp fresh coriander roughly chopped
  • Salt and freshly ground black pepper to taste
For the Lemon Rice

  • 500 ml water
  • Juice and finely grated zest of 1 lemon
  • 3 whole cloves
  • Pinch of salt
To serve, optional
  • Lemon wedges
  • Extra sliced green chilli
  • Fresh rainbow salad

Equipment

  • Large, deep frying pan or sauté pan
  • Medium saucepan with lid for the lemon rice
  • chopping board
  • Sharp knife
  • Wooden spoon
  • Grater for the ginger, garlic and lemon zest
  • Measuring jug
  • Measuring spoons
  • Citrus juicer optional

Method

  1. Cook the chicken. Heat the extra virgin olive oil in a large, deep frying pan over a medium heat. Add the chicken and cook for 5–7 minutes, turning occasionally, until lightly golden. Remove from the pan and set aside.
  2. Build the flavour base. Add the cumin seeds to the same pan and cook for around 30 seconds until fragrant. Add the onion and cook gently for 6–8 minutes until softened and lightly golden.
  3. Add the aromatics and spices. Stir in the green chillies, garlic, ginger, turmeric, ground coriander and garam masala. Cook for 1 minute, stirring continuously, until fragrant.
  4. Make the creamy sauce. Add the chopped tomatoes and cook for 2–3 minutes before returning the chicken to the pan. Pour in the coconut milk and stir well. Bring to a gentle simmer, then partially cover and cook for 12–15 minutes, or until the chicken is cooked through and the sauce has thickened.
  5. Meanwhile, prepare the lemon rice. Add the rinsed basmati rice, water and cloves to a saucepan. Bring to the boil, then reduce to a low heat, cover and simmer according to the packet instructions until the rice is tender and the water has been absorbed. Remove from the heat and leave covered for 5 minutes.
  6. Finish the curry. Stir the baby spinach through the curry and cook for 1–2 minutes until just wilted. Add the lemon juice, season with salt and black pepper to taste, then stir through most of the fresh coriander.
  7. Finish the rice. Remove the cloves, fluff the rice with a fork and gently stir through the lemon zest and juice.
  8. Serve. Spoon the creamy chicken and spinach curry alongside the lemon rice and finish with any remaining fresh coriander. Add a lemon wedge or sliced green chilli if you like. Make sure you add fresh rainbow salad.
